隔了那麽久再做北海道牛奶蛋糕,感覺又不一樣了。想到自己之前幾乎每天都在趕訂單的日子,雖然很辛苦,但是看到顧客的笑容,很多辛苦也會一掃而空。
做阿海的生日蛋糕卷還有剩下的卡士達奶油不要浪費,我用來做北海道牛奶蛋糕的内容物,我吃了也覺得非常可口呢!
蛋黃 5個
蛋白 5個
砂糖 70克
低筋麵粉 110克
牛奶 100ML
沙拉油 60ML
做法:
- 蛋黃加入30克的砂糖然後用攪拌器打成乳白色,接著加入沙拉油,牛奶有攪拌均勻,並且加入篩過的麵粉,攪拌均勻待用。
- 蛋白分三次加入砂糖,打成有小彎鈎的階段。
- 將打好的蛋白分三次,以fold in的方式加入蛋黃麵糊裏面。
- 將麵糊勺入紙杯中,烘烤25分鐘,170度。
- 烘好的蛋糕待冷,就可以擠入自己喜歡的奶油餡料了。
Egg Yolk 5 pcs
Egg white 5 pcs
Fine Sugar 70g
Low protein Flour 110g
Milk 100ML
Veg Oil 60ML
- Put 30g fine sugar into the egg yolk, and beat it until become light color then add in the veg oil and milk, mix it well.
- Add in the flour (after stirred) , mix well.
- In a clean, dry mixing bowl, whisk egg whites with an electric mixer until mixture becomes frothy and foamy. Add in the sugar in 3 separate additions while beating at high speed till just before stiff peaks form.
- Add the egg white into egg yolk batter in 3 additions, use fold in method, slowly mix the batter.
- Pour the mixed batter into paper cup, bake 170C, 25 Mins.
- After baked, please leave it cool then you may pump in the Custard cream or whipping cream whatever you like.

Sherleen,我並沒有倒扣哦!雖然是戚風蛋糕的蛋糕題,但是因爲做成了杯子蛋糕,所以不用倒扣。

回覆刪除Angel, 這款蛋糕確實是戚風蛋糕体,而且我們自家做的,不放什麽發粉,所以自然會收縮,不必擔心,加了cream,就會飽滿了。
回覆刪除Ice-Cream,我只是加入了普通的Custard Cream而已,沒有什麽特別的食譜哦~ 你可以參考我之前做puff使用的cream,我覺得都很適合使用在這裡。

This is actually a chiffon cake recipe, as you know chiffon cake texture will be shrunk while it cool, but this small cup cake will be look nicer just become it pump with custard cream. The fillings will let it look full.
Actually my cake shrunk too while it cool, but i let it cool naturally, and pump it the filling until full, then your cake will look prettier.
